With a new menu, a fresh coat of paint, and time in the kitchen with family, says Zaida Melendez.<\/p>\n\n\n\n<p>Melendez, owner of <a href=\"https:\/\/www.belensbakery.com\/\">Bel\u00e9n Casa de Pan<\/a> on Main Street, is expanding her offerings and opening <a href=\"https:\/\/www.instagram.com\/belensclarkbrunch\/\">Bel\u00e9n\u2019s Clark Brunch<\/a> in the former home of Annie\u2019s Clark Brunch, a longtime popular diner adjacent to campus. The menu will offer brunch staples with a twist. Guests can expect a blend of Salvadoran dishes such as pupusas and tamales alongside classic American diner meals. Bel\u00e9n Casa de Pan will remain open.<\/p>\n\n\n\n<p>\u201cMy sisters and cousins have come over to taste fusions of American and Salvadoran food, trying to see what will work\u201d for the brunch menu, Melendez says. \u201cI want to do this because I love diner food. My favorite dish is chicken and waffles, and I always try a diner\u2019s omelet.\u201d<\/p>\n\n\n\n<p>Melendez\u2019s background is in health care, and she worked as a respiratory therapist during the pandemic. Baking was a comfort after stressful days at work.<\/p>\n\n\n\n<p>\u201cBaking helps me clear my mind,\u201d she says. \u201cI used to bake when I was a teenager, just out of the box. Then, I started baking Salvadoran pastries and sweet bread. Growing up, there were never Salvadoran businesses here in Worcester. We used to go without our traditional items, but over time, I had the curiosity to learn how to make them myself.\u201d<\/p>\n\n\n\n<p>Melendez was born in El Salvador and raised by her grandparents there until she was 8 years old. Without a traditional background in food service, the undertaking was uncharted territory.<\/p>\n\n\n\n<p>Joseph Corazzini, then vice president of government community and affairs at Clark, cheered on Melendez.<\/p>\n\n\n\n<p>\u201cI never thought I would open a brunch spot. But he said, \u2018Why not?\u2019 With the school\u2019s help and encouragement, I got brave,\u201d she recalls.<\/p>\n\n\n\n<p>Diners hold a special place in Melendez\u2019s heart. \u201cI used to work nights, and my husband works days. I\u2019d get out of work, he\u2019d get the kids on the bus, and we would meet at a diner in the mornings about once a week,\u201d she says.<\/p>\n\n\n\n<p>That passion for diners is guiding her renovation of the former Annie\u2019s space.<\/p>\n\n\n\n<p>\u201cWhen I came in with a key in hand, I was like, \u2018I want to liven this place up,\u2019\u201d she says. \u201cMy husband reupholstered all the booths, and we painted the walls. The colors are inspired by my grandparents\u2019 home. I feel like if they were here, they\u2019d be proud.\u201d<\/p>\n\n\n\n<p>Melendez\u2019s grandparents\u2019 house was painted turquoise with a red stripe running horizontally \u2014 a pattern repeated at the diner. A photo of Melendez\u2019s grandfather and great aunt hangs on the wall.<strong><\/strong><\/p>\n\n\n\n<p>\u201cMy childhood best friend has been helping me with the decorations,\u201d she says. \u201cI keep throwing things at her. I have a vision. I want it to feel homey.<\/p>\n\n\n\n<p>\u201cI want someone to walk in here and feel the cultures,\u201d she says. \u201cI don\u2019t want anyone to walk in and think it\u2019s all Salvadoran, because it\u2019s not. Her customers will be able to order the \u201cAnnie\u2019s Special,\u201d which includes two eggs, bacon or sausage, home fries, and toast. Melendez will break from one Annie\u2019s tradition \u2014 accepting cash only \u2014 and will take card payments.<\/p>\n\n\n\n<p>In addition to Annie, Melendez\u2019s family members also inspired dishes on the Bel\u00e9n\u2019s Clark Brunch menu. \u201cBecky\u2019s Special,\u201d named after one of her daughters, will get you three chocolate and peanut butter chip pancakes topped with strawberries, bananas, and whipped cream. Her husband, Jos\u00e9, is responsible for \u201cJos\u00e9\u2019s Big Breakfast\u201d \u2013 a 6 oz. steak, two eggs, home fries or casamiento, chimol, and a choice of toast or tortillas.<\/p>\n\n\n\n<p>\u201cIt really is a family business,\u201d says Melendez. One of her daughters is a baker and runs the business\u2019 social media. Another daughter, a mechanical engineer, is handy with kitchen equipment. Her favorite thing about owning her restaurant is the community she\u2019s built. She had been a shyer, more introverted person before opening Bel\u00e9n Casa de Pan \u2014 going to work and then coming home to sleep. Her advisor from Clark\u2019s <a href=\"https:\/\/www.clarku.edu\/small-business-development-center\/\">Small Business Development Center<\/a> told her to \u201cnetwork, network, network\u201d when she started Bel\u00e9n\u2019s.<\/p>\n\n\n\n<p>\u201cI have so many friends now,\u201d she says. \u201cI get to talk to Clark students and staff. I get to meet city councilors and state representatives. There\u2019s such a wide spectrum of customers here in Main South. On Saturdays, people fight for the big table in [the cafe]. It makes me excited about having the diner with more room for bigger groups.\u201d<\/p>\n\n\n\n<p>Bel\u00e9n\u2019s Clark Brunch is having a grand opening on Thursday, April 30.
