{"id":12333,"date":"2024-09-24T23:08:00","date_gmt":"2024-09-24T23:08:00","guid":{"rendered":"https:\/\/www.golive.clarku.edu\/news\/2024\/09\/24\/a-taste-of-cuisine-and-culture-in-greece-shaped-by-migrants\/"},"modified":"2025-05-19T09:22:34","modified_gmt":"2025-05-19T13:22:34","slug":"taste-of-cuisine-and-culture-in-greece-shaped-by-migrants","status":"publish","type":"story","link":"https:\/\/www.clarku.edu\/news\/2024\/09\/24\/taste-of-cuisine-and-culture-in-greece-shaped-by-migrants\/","title":{"rendered":"A taste of cuisine and culture in Greece, shaped by migrants"},"content":{"rendered":"\n            \n            <p class=\"intro news-subhead\">In Thessaloniki, students explore \u2018relationship between migration, food, and belonging\u2019<\/p>\n            <p><html><body><\/p>\n<p>Since international migration became legally restricted in the early 20th&nbsp;century, millions of people have fled their homelands involuntarily, moving across the world and settling into new communities.<\/p>\n<div class=\"csidebar right\">\n<\/p>\n<h4>Belonging Talks on food<\/h4>\n<p>A series of Belonging Talks this fall will focus on &ldquo;Food, Migration, and Belonging: Sustainable Practices for Integrated Communities.&rdquo; All talks will be held noon to 1 p.m. via Zoom:<\/p>\n<ul>\n<li><strong>Oct. 9:<\/strong> Food and migration research team in Turkey<\/li>\n<li><strong>Nov. 13:<\/strong> Chef Panos Karafoulidis in Greece<\/li>\n<li><strong>Nov. 20:<\/strong> Network of immigrant, refugee, and PoC chefs in Oakland, Calif.<\/li>\n<\/ul>\n<p><a class=\"arrow-link\" href=\"https:\/\/linktr.ee\/clarkibh\" aria-label=\"Register for a talk\">Register for a talk<\/a><br \/>\n<\/div>\n<p>In &ldquo;forced migration,&rdquo; as the United Nations&rsquo;&nbsp;International Organization for Migration <a href=\"https:\/\/www.migrationdataportal.org\/themes\/forced-migration-or-displacement\">calls it<\/a>, what happens when refugees join a new community? How do they adjust to different cultures and languages? How do they feel at home, like they belong, in a community that may or may not welcome them? And how might a community be transformed by migrants?<\/p>\n<p>Eleven Clark undergraduate students investigated these questions this summer in Greece, researching the history of forced migration and settlement through the lens of food and culture. Their work was part of Clark&rsquo;s newly developed study abroad course, People-on-the-Move Research Studio: Food, Migration, and Belonging in Thessaloniki, funded in part by the Leir Program.<\/p>\n<p>Co-taught by Professor <a href=\"https:\/\/www.google.com\/url?client=internal-element-cse&amp;cx=008285272570661257438:td1wgria-u4&amp;q=https:\/\/www.clarku.edu\/faculty\/profiles\/anita-fabos\/\">Anita F&aacute;bos<\/a> and research scholar <a href=\"https:\/\/www.clarku.edu\/integration-and-belonging\/people\/leora-kahn\/\">Leora Kahn<\/a> of the <a href=\"https:\/\/www.clarku.edu\/departments\/sustainability-social-justice\/\">Department of Sustainability and Social Justice<\/a>, the Studio Course was one of the department&rsquo;s many <a href=\"https:\/\/www.clarku.edu\/departments\/sustainability-social-justice\/experiential-learning\/\">Global Learning Collaboratives<\/a>, which allow students to participate in hands-on learning experiences with community partners in different parts of the world. F&aacute;bos and Kahn lead Clark&rsquo;s <a href=\"https:\/\/www.clarku.edu\/integration-and-belonging\/\">Integration and Belonging Hub<\/a>, which supports collaboration and research around fostering migrant- and refugee-inclusive communities locally, nationally, and globally.<\/p>\n Students got plenty of chances to try food in the neighborhoods of Thessaloniki, home to thousands of migrants over the centuries. At the Academia Art Restaurant, they had a meal featuring Thessaloniki Jewish cuisine. <em>(Photo courtesy of Zoe Black)<\/em>\n<p>&nbsp;<\/p>\n<p>Drawing students from a variety of undergraduate majors, the course met in Thessaloniki, the second-largest city in Greece, known for its rich food culture. In 2021, UNESCO named Thessaloniki a &ldquo;City of Gastronomy&rdquo; for chefs&rsquo; use of fresh ingredients and the production of feta, yogurt, and olive oil.<\/p>\n<figure id=\"attachment_60213\" aria-describedby=\"caption-attachment-60213\" style=\"width: 500px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-60213\" src=\"https:\/\/www.clarku.edu\/news\/wp-content\/uploads\/sites\/37\/Students-tasting-samples-Greece-768x1024-2.jpg\" alt=\"Students tasting samples in Greece\" width=\"500\" height=\"667\"><figcaption id=\"caption-attachment-60213\" class=\"wp-caption-text\">Panagiotis Karafoulidis, a chef and founder of Gastro Routes food tours, passes around Greek donuts to students, from left, Ava Garlington, Zoe Black, Mio Loubaresse-Takei, and Sofia Moncayo. <em>(Photo by Anita F&aacute;bos)<\/em><\/figcaption><\/figure>\n<p>The students had plenty of opportunities to try cuisine from many cultures, guided by Panagiotis &ldquo;Panos&rdquo; Karafoulidis, a chef, former director of the Thessaloniki Culinary Arts Institute, and founder of Gastro Routes, which offers tasting tours. Over four weeks, they visited restaurants, bakeries, food markets, and a village home to Karafoulidis&rsquo; family of Anatolian Christian refugees and their descendants.<\/p>\n<p>&ldquo;He had set up an entire program for us, including observing women who were preparing for a wedding, cooking produce from his garden, and cooking over a fire,&rdquo; F&aacute;bos says. &ldquo;He knew how to work with and teach young people, and as a person from a refugee background himself, he knew the unique food culture of Thessaloniki really well.&rdquo;<\/p>\n<p>Sitting at the crossroads between Asia and Europe, Thessaloniki has a long history of attracting, and providing refuge to, migrants. But like many countries, Greece has experienced a migrant crisis in the 21st century. In 2015, nearly 1 million people from Africa, the Middle East, and Asia arrived on rickety rafts and boats to the Greek islands. Still today, many pass through Greece on their way to other countries in the European Union.<\/p>\n<p>&ldquo;Even though there&rsquo;s a welcoming tradition in Greece,&rdquo; F&aacute;bos says, &ldquo;today there isn&rsquo;t a lot of refugee settlement.&rdquo;<\/p>\n<p>The course focused on the waves of migrants who came much earlier &mdash; going back as far as the 15th century, when Spain expelled Jews during the Inquisition. Many more migrants were forced to move to Greece after the collapse of the Ottoman Empire in the early 20th century. Thessaloniki&rsquo;s significant Jewish population was destroyed by Nazi deportations in 1943.<\/p>\n<p>Today, however, Thessaloniki recognizes the rich history and culture of past and present Jewish inhabitants through a museum of Jewish history, an educational program, and a revival of Jewish cuisine. How did their families start their businesses? Was there a migrant story?&rdquo; F&aacute;bos says. &ldquo;They got to know the neighborhoods really well, and their projects were amazing.<\/p>\n<div class=\"csidebar right\"><\/p>\n<h4>New study abroad class<\/h4>\n<p>In summer 2025, the Clark\/Leir Program study abroad class will visit Spain and Turkey for Medieval Mediterranean Cities, Urban Environments, and Cultural Heritage with Art History Professor Naomi Pitamber.<\/p>\n<p><a class=\"arrow-link\" href=\"https:\/\/www.clarku.edu\/offices\/studyabroad\/\" aria-label=\"Study abroad\">Study abroad<\/a><br \/>\n<\/div>\n<p>&ldquo;The students really grasped that integration is the process of &lsquo;becoming together,&rsquo; &rdquo; she adds. &ldquo;It&rsquo;s the old and new transforming each other.&rdquo;<\/p>\n<p>For their final projects, students on the Ana Poli team used GIS skills to create a <a href=\"https:\/\/storymaps.com\/stories\/e8cbb41cc3a04dac814cc15887d31d25\">story map<\/a>; the City Center group designed an <a href=\"https:\/\/www.canva.com\/design\/DAGJON2ifAc\/USQaP1UttgskUscjM-8drw\/edit\">online scrapbook<\/a> filled with research, stories, maps, and photos; and the Kalamaria students produced a <a href=\"https:\/\/www.youtube.com\/watch?v=w0aja0Kwyhs\">video<\/a> of interviews with migrants and their descendants.<\/p>\n<p>The students integrated what they had learned from guest faculty in anthropology, archaeology, history, filmmaking, and Thessaloniki&rsquo;s food and culture. Eftihia Voutira, one of the founders of the field of refugee and forced migration studies and an emerita professor at the University of Macedonia&rsquo;s Department of Balkan, Slavic and Oriental Studies, gave an overview of the history of forced migration in northern Greece.<\/p>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_60211\" aria-describedby=\"caption-attachment-60211\" style=\"width:
